Ý FPs nói là yeast Saccharomyces cerevisiae giúp quá trình lên men tạo ra rươu, nó ăn sugar nhả alcohol. Rồi Mycoderma aceti (mother of vinegar) convert alcohol đó thành acid (giam), chứ không phải Mycoderma aceti tạo ra rượu.
